Canepina – A “summer and walking” variant of one of the most traditional and loved recipes of Roman cuisine. Felice Arletti conquers judge Lorenzo Sandano of the Prova del cuoco with a cold-made cacio e pepe. And with caeciliani, typical pasta from his Canepina.
Competing against the "Captain" Paolo Presutti, a true Roman, the Canepinese "storytelling chef" wins what the hosts Elisa Isoardi and Claudio Lippi call "the cacio e pepe derby".
While Presutti offers a version faithful to tradition, made with tonnarello, Arletti uses caeciliano, worked with an umbrella iron, to create the "cold" variant of cacio e pepe.
“Cream with a hemp cloth with pecorino and pepper – explains the Canepina chef – perhaps with the final touch of a summery lemon peel. Happy summer everyone."
And it is precisely the hemp cloth that convinces Sandano. “A gesture that brought me back to a distant memory” defined the judge, attributing the victory to Arletti.
