The menu changes according to seasonality, with a careful selection of ingredients and suppliers themselves, to offer our Guests unique flavors and ensure our Guests have the certainty of tasting the excellence of the territory, both as finished products and as ingredients of exclusive recipes.
First dishes
A kitchen that transforms the products of our beloved land, which pushes on innovation and contamination. Well aware that everything starts from the territory and from the sometimes poetic story of the ancient stories of these gardens on the slopes of Cimini.
In addition to the specialties of the typical Canepinese cuisine and strictly hand-made pasta, there is also space for flours made from ancient grains, hemp, hazelnuts and safflower.
Seconds
We love to let you find the scents of the woods and territories of Tuscia in all our dishes. We love to dare in combinations and experiment to delight you in a journey of flavors that tell the story of our land. Even in the second courses, there is space for local tradition, but also meat such as that of the Green Leprino rabbit, which few people still know about, but which is the only Italian breed registered and "created" by the University of Tuscia, bred so that it can stay on the move as much as possible.
The sweets
Inside the restaurant there is also a corner for the direct sale of the company's agricultural products, many of which are used in the preparation of the foods and desserts served.
