Everything was made with hemp, fabrics, flour and food products. Worldwide prohibitionism from the Second World War onwards meant that this plant was progressively put aside. Certainly before then in Canepina (VT), hemp, from which the town takes its name, had always been cultivated and transformed. The ancient name Canapina, mentioned for the first time in an 11th century document, originates from the cultivation of this plant.
Background
The "cannabis sativa" which was grown in Canepina belongs to the same family of plants as the "indica cannabis" which however has a high content of narcotic substances. The Arletti brothers, with their passion and love for the territory, have decided to propose again, in the AgriRistoro "Il Calice & la Stella", the food use of Sativa Hemp. Relaunching an ancient but forgotten ingredient on the table, also in light of the 2009 legislation of the Italian Ministry of Health which recognized the nutritional properties of hemp for human health. In fact, hemp is rich in carbohydrates, vitamins, raw fiber and mineral salts, but also in high quality proteins, soluble and insoluble fibers and essential fatty acids, and in the kitchen it can be found as flour, in leaves, seeds or oil, and It has a pleasant sweetish taste when tasted.
The healing properties and the thousand possibilities of use of hemp have been known for a long time, even if those specifically linked to the world of cooking are not so widespread. In fact, much is known about how, for example, from the Middle Ages onwards the fiber of this plant was used to obtain fabrics for clothing and for naval use, such as sails and ropes, while the recipes are much less widespread. Inspired by the ancient tradition, starting from 2015 the menu card will be enriched with new dishes. Cannabis-based hay will certainly be present among the handmade pasta first courses. Furthermore, fettuccine, tagliatelle and gnocchi made from hemp sativa flour. There will certainly be no shortage of second courses and finally, bread, focaccias, jams, desserts, beer and many other products currently being reworked.
