CANEPINA – In this moment of crisis and closures, those with a story are saved. Like one of the excellences of Tuscia, Felice Arletti. His restaurant "Il calice e la Stella" received the red shrimp recommendation: it is the seventh tourist guide that includes the chef among its preferences. It comes after "Repubblica", "Touring Club" and other famous institutions of Italian cuisine. He too is obviously going through the difficult historical moment for restaurateurs: "Before the economy, obviously, we must talk about health. I would never have wanted to find myself in the Government at the moment of choice. The catering industry, however, is affected despite having done what was required to comply with regulations: it is sad to still be considered the main point of contagion despite this, it is not right".
Felice Arletti cooks with passion and this characteristic, over the years, has allowed us to build a story: "In the end, those who work with passion will remain standing, not those who improvise. Those who have worked well in the past will be saved." And he advises young people: "You need to have technical skills and food culture to do this job. We must also be aware of the raw material: a dish that becomes a dish and not an administration of food."
